Ingredients

Spiral Cut Ham
  • 8 - 10 lbs. Spiral Cut Ham
Caramelization Ingredients
  • 1/2 Cup of unsalted butter
  • 1 Cup of brown sugar
  • 2 tbsp. 100% pure maple syrup
  • 1/3 Cup sugar in the raw
  • 1 cup of Apple Cider (Optional)

Instructions

  1. Preheat Your Smoker: Begin by preheating your smoker to 225 degrees Fahrenheit.
  2. Prepare the Ham: Once your smoker has reached the desired temperature, place the spiral ham onto the smoker with the flat end resting on the grates. Let it sit there for approximately 1.5 hours.
  3. Optional Spritz: If you have some apple cider on hand, consider spritzing the ham every 30 minutes. This step enhances the smoke infusion and imparts a deeper, sweet yet smoky flavor to the ham.
  4. Create the Flavorful Glaze: While your ham is on the smoker, it's the perfect time to prepare a caramelization glaze that will make the flavor pop. Melt a half-stick of butter, and then mix in 1 cup of brown sugar and 2 tablespoons of pure maple syrup. As the glaze begins to melt and combine, use your BBQ brush to rub it generously on the ham. You may find it helpful to use a knife or spoon to lift each spiral cut section, allowing you to place the glaze inside the ham.
  5. Increase the Smoker Temperature: After applying the glaze, bump up the temperature of your smoker to 275 degrees. Keep it at this temperature for approximately 1 more hour.
  6. Rest and Serve: After the hour is up, bring the ham inside and let it rest for about 15 minutes. This resting period allows the flavors to settle. Then, slice and savor the exquisite double smoked ham.
